Ingredients

You'll need: Stovetop.

Method

  1. Heat a large wok or broad pan over the highest possible flame. Add neutral oil and swirl it to coat the sides of the wok.

  2. Once the oil is smoking hot, add the finely chopped garlic, ginger, and spring onion whites. Sauté rapidly for 10-15 seconds.

  3. Add the finely diced carrot and french beans and stir-fry for a minute so they keep their crunch.

  4. Add the diced green capsicum and stir-fry for another 30 seconds.

  5. Add the chilled cooked rice into the wok. Break up any large lumps quickly using a spatula.

  6. Drizzle the soy sauce and vinegar uniformly over the rice. Sprinkle black pepper powder and salt.

  7. Toss and mix everything continuously on high heat for 2-3 minutes, ensuring every grain is coated and infused with the smoky wok flavor.

  8. Turn off the heat, garnish generously with spring onion greens, and serve immediately.
