Method

  1. Blanch the mixed vegetables (carrots, beans, cauliflower) in boiling salted water for 5 minutes until half-cooked. Drain and set aside.

  2. Heat the oil in a wok or wide pan. Stir-fry the sliced onion and capsicum on high heat for 2 minutes; they should stay crunchy.

  3. Lower the heat, add ginger-garlic paste, and fry for a minute until the raw smell goes away.

  4. Add tomato puree, red chilli powder, and coriander powder. Cook until the tomato paste thickens and leaves the sides of the pan.

  5. Stir in the tomato ketchup—this balances the spice with a distinct, glossy sweetness characteristic of restaurant-style Jalfrezi.

  6. Add the blanched mixed vegetables, paneer strips, and salt. Toss gently on high heat for 3-4 minutes to coat everything uniformly in the sauce.

  7. Finish with a sprinkle of garam masala. Serve immediately while the vegetables are still vibrant and firm.

Tip

Jalfrezi literally means 'hot-fry'. The trick is to stir-fry the vegetables on high heat so they retain their crunch instead of turning mushy.
