Traditional Mawa Gujiya

Traditional mawa gujiya is a Holi and Diwali pastry with a flaky maida crust and sweet khoya, coconut, nut and raisin filling.

Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

The dough rests for 45-60 minutes so it rolls without shrinking and fries into a flaky shell.

Method

  1. Make the dough: In a wide bowl, add the maida and the melted ghee. Rub the ghee thoroughly into the flour until it resembles coarse breadcrumbs and holds shape when pressed.

  2. Gradually add the cold water and knead into a stiff, tight dough. Cover with a damp cloth and rest for at least 45-60 minutes.

  3. Make the filling: Heat a pan on a low flame and lightly roast the crumbled khoya for 3-4 minutes until it turns light pink and aromatic. Transfer to a bowl to cool completely.

  4. Once the khoya is cool, add the powdered sugar, roasted desiccated coconut, chopped nuts, raisins, and cardamom powder. Mix well.

  5. Divide the rested dough into small, equal-sized balls. Roll each ball into a thin, 4-inch circle without using dry flour.

  6. Put a portion of the sweet khoya filling on one half of the circle. Brush a little water along the edges.

  7. Fold the other half over to make a half-moon shape. Press the edges firmly to seal. You can twist and pinch the edges to make a traditional pattern, or use a gujiya mold.

  8. Heat the oil or ghee in a deep pan on medium-low heat. The oil should be only moderately hot.

  9. Slide the gujiyas in gently. Fry on low-medium heat for 12-15 minutes, flipping occasionally, until they are golden brown and crisp.

  10. Drain on paper towels. Cool completely before storing in an airtight container.

How to tell it's done

The crust should be evenly golden, crisp and flaky, with sealed edges and a dry, crumbly mawa filling inside.

Getting it right

Tip

Do not fry gujiya in very hot oil; the crust will blister and brown before the center cooks. Keep the heat medium-low and let each batch fry slowly.

What to serve it with

Serve mawa gujiya with thandai for Holi, masala chai for Diwali, or pack the cooled pieces in festival sweet boxes.

Common mistakes

The gujiyas open in the oil.
Do not overfill them, brush the rim with water, press firmly, and keep the shaped pieces covered until frying.

Storing and reheating

Cool completely, then store in an airtight container. Because the filling contains khoya, refrigerate for up to 5 days and bring to room temperature before serving.
