Includes dough resting and a short cooling period for the hearts-of-palm filling before baking.

Method

  1. For the crust, rub cold butter into 1 cup flour with a pinch of salt until crumbly.

  2. Add half the beaten egg and just enough cold water to form a soft dough. Rest for 15 minutes.

  3. Heat oil in a pan. Add onion and garlic, and cook until soft.

  4. Add tomato and cook until pulpy. Stir in hearts of palm, green olives if using, salt, and black pepper.

  5. Sprinkle in the remaining flour and stir for 1 minute. Add milk gradually and cook until the filling becomes creamy and thick.

  6. Turn off the heat and stir in parsley. Cool the filling slightly.

  7. Roll out the dough, line a small pie dish, add the filling, and cover with remaining dough if desired.

  8. Brush with remaining beaten egg and bake at 190°C for 25–30 minutes, until golden.

The crust should be lightly crisp and golden, while the filling stays creamy, thick, and not watery.

Substitutions

  • Use canned or jarred hearts of palm, drained well; fresh substitutes will not give the same palmito character.
  • Skip green olives if you want a milder filling, but keep the hearts of palm as the main ingredient.
  • Check canned hearts of palm and green olives for sodium because both can be salty.
