Method

  1. Mix curd, tomato puree, olive oil, lemon juice, garlic, paprika, cumin, black pepper, and salt in a bowl.

  2. Add the chicken pieces and coat them well. Cover and marinate until the chicken absorbs the flavors.

  3. Thread the chicken, green capsicum, and onion onto skewers.

  4. Heat a grill or grill pan over medium-high heat and brush lightly with oil if needed.

  5. Grill the skewers, turning often, until the chicken is cooked through and lightly charred at the edges.

  6. Rest briefly before serving so the juices settle.

Common mistakes

The chicken is dry.
Use thigh rather than breast if you can, and take the skewers off while the pieces are still just springy. Curd in the marinade helps, but it cannot rescue overcooked chicken.
The vegetables burn before the chicken is done.
Cut the capsicum and onion into pieces at least as thick as the chicken, or thread them on separate skewers. They cook far faster than meat when they are cut small.

Substitutions

  • Chicken breast or thigh pieces can be used; thigh stays juicier on the grill.
  • Turkish pepper paste can replace part of the tomato puree for a deeper pepper flavor.
  • A hot tawa can work if a grill is unavailable, but the charred flavor will be lighter.
