Method

  1. Pat the chicken dry and season it with salt and black pepper.

  2. Heat the measured olive oil in a heavy pan over medium heat. Brown the chicken on both sides, then transfer it to a plate.

  3. Add the onion to the same pan and cook until soft and lightly golden. Add the garlic and ginger and stir until fragrant.

  4. Add the cumin, coriander, cinnamon, turmeric, and paprika. Stir briefly so the spices bloom in the oil without burning.

  5. Return the chicken to the pan. Add the warm chicken stock and dried apricots, then bring the sauce to a gentle simmer.

  6. Cover and simmer on low heat until the chicken is cooked through and tender. Turn the pieces once during cooking.

  7. Uncover and simmer briefly if the sauce needs thickening. Finish with lemon juice, toasted almonds, and coriander leaves.
