Ingredients

You'll need: Stovetop.

Includes browning the beef, slowly simmering it until tender, and reducing the peanut-tomato sauce until it coats the vegetables.

Method

  1. Heat oil in a heavy pot. Add the beef and brown it lightly on all sides.

  2. Add onion and garlic. Cook until the onion softens and the raw smell of garlic fades.

  3. Stir in tomato puree, salt, black pepper, chili powder, and bay leaf. Cook until the tomato base thickens slightly.

  4. Whisk the ground peanut paste with hot water until smooth, then pour it into the pot.

  5. Cover and simmer until the beef begins to soften.

  6. Add carrot, potato, and cabbage. Continue simmering until the vegetables are tender and the sauce is thick.

  7. Remove the bay leaf, adjust salt, and rest the stew for a few minutes before serving.

The sauce should be thick, creamy, and nutty, with tender beef and soft but intact vegetables.
