Method
In a blender, combine the fresh coriander, mint leaves, and green chillies with a tiny splash of water. Grind to a smooth, thick green paste.
Transfer the green paste to a large bowl. Add the hung curd, ginger garlic paste, cumin powder, garam masala, lemon juice, half of the cooking oil, and salt. Whisk until properly mixed.
Add the chicken chunks to the green marinade, rubbing the mixture thoroughly into the meat. Cover and let it rest for the designated marination period.
Preheat a grill pan or heavy skillet over high heat. Skewer the marinated chicken chunks tightly.
Place the skewers onto the hot pan, brushing lightly with the remaining oil. Cook for 12-15 minutes, turning every few minutes, until the chicken is fully cooked and slightly charred on the edges.

Ensure the inner juices run clear when a piece is pierced. Remove from heat, dust generously with chaat masala, and serve hot.

Tip
To replicate the authentic dhaba smokiness, perform the 'Dhungar' method: place a red-hot charcoal in a small steel bowl over the marinated raw chicken, pour a drop of ghee, and trap the smoke with a tight lid for 5 minutes before cooking.
What to serve it with
Serve with onion rings tossed in red chilli powder and a wedge of lemon. Excellent alongside roomali roti.
