Method
Heat the coconut oil in a wide pan or kadhai positioned on a medium flame.
Drop in the mustard seeds and allow them to fully splutter. Add the urad dal and chana dal. Fry gently on low heat until the lentils acquire a crisp, light golden brown hue.
Introduce the broken dry red chillies, fresh curry leaves, and asafoetida (hing). Sauté rapidly for 10 seconds to temper the oil.

Fold in the grated or finely diced beetroot and toss well so the tempered oil coats every shred.
Season with salt and lightly sprinkle the water over the top to assist the steaming process. Stir everything cohesively.
Secure a lid over the pan. Cook on low-medium heat for 8-10 minutes. Stir occasionally, ensuring the beetroot softens perfectly while maintaining a resilient, slight bite.

Once the moisture has completely evaporated and the beetroot is beautifully tender, turn off the heat immediately.
Gently fold in the freshly grated coconut, preserving its bright texture.
Serve warm.
