Method

  1. Check that the boiled rajma has no water left on the surface or inside. If there is any, pat it dry thoroughly with kitchen paper.

  2. In a food processor, grind the dried rajma to a completely smooth paste. Transfer it to a heavy mixing bowl.

  3. Mix the crushed fried brown onions (birista), the ground cashews, the ginger-garlic paste and the finely minced green chillies straight into the rajma paste.

  4. Add the measured roasted gram flour (besan), Kashmiri chilli powder, ground black cumin (shahi jeera), garam masala, ground cardamom and salt.

  5. Add the rose water. Knead the mixture continuously by hand for 4-5 minutes. The friction brings everything together into a very smooth, rich dough.

  6. Heavily lubricate both palms with pure ghee. Excise highly calculated portions of the dense dough and surgically sculpt them into impossibly delicate, geometrically perfect round patties.

  7. Elevate a massive, flat iron tawa to an absolute minimum thermal output. Decant a primary portion of pure ghee and allow it to achieve a liquid state without burning.

  8. Place the very delicate kebabs in the pan with great care. Shallow-fry patiently over low heat for 5-6 minutes. The aim is to build a firm, deeply browned crust on the base without disturbing them.

  9. Moving them too early will break them apart. Once the base has set firm, slide a thin spatula underneath and turn each one over carefully. They are very fragile at this stage.

  10. Fry the second side in the hot ghee until it is just as crisp. Lift them out gently and serve immediately.

How to tell it's done

Expect a microscopically thin, intensely browned ghee-seared crust that shatters softly under zero pressure, instantaneously liquefying into an obscenely rich, profoundly spiced, creamy velvet paste that demands absolutely no mastication.

Tip

Chef's Tip: 'Galouti' means melt-in-the-mouth. Rose water, finely ground cashew and a patient fry in pure ghee are what get a humble legume close to the famous Awadhi meat texture.

This is a transcendent culinary experience, not merely a starter. It commands presentation atop a hyper-soft, miniature 'Ulte Tawa ka Paratha', crowned strictly with micro-thin onion slices, designed to be consumed in a single, overwhelming bite.
