No inactive soaking is required; have the cashews and raisins ready because they fry quickly in the ghee.
Method
Pressure cook the lentils with turmeric, salt, and the measured water for 2-3 whistles until smooth and well-cooked. Whisk vigorously to achieve a creamy consistency.
In a small pan, heat a portion of the ghee. Fry the cashews until golden, then introduce the raisins until they plump up. Remove and reserve them.
Heat the remaining ghee until it reaches the appropriate temperature. Add the cumin seeds and allow them to splutter.
Add the asafoetida and whole dry red chillies, sautéing briefly to release their aromas.
Remove the tempering pan from the heat source and immediately stir in the red chilli powder to prevent scorching.
Cascade this vibrant red tempering over the hot lentil base.
Gently fold in the reserved fried cashews and raisins. Serve immediately to preserve the textural crunch of the nuts.
