Method
Rinse the rice thoroughly and pressure cook it with the specified water to achieve a very soft, slightly mushy texture (approximately 3 whistles).
While the rice is still warm to the touch, mash it gently with a spatula to break down any dense clumps. Spread it out and let it cool absolutely completely.
Fold the fresh curd, milk, and salt into the cooled rice base. Whisk or mix vigorously until an impeccably smooth and creamy consistency is formed.
Place a small tempering pan over medium heat and warm the oil. Introduce the mustard seeds and permit them to splutter completely.
Add the split black gram and split bengal gram. Sauté them continuously until they toast to a beautiful, crunchy golden hue.
Incorporate the freshly grated ginger, finely minced green chilli, and curry leaves. Sauté briefly just until their vibrant aromas are released.
Cascade the sizzling tempering directly over the prepared curd rice and fold it in with a gentle hand.
Finish the presentation with a scattering of ruby-red pomegranate seeds and vibrant fresh coriander.
Serve this dish delicately chilled or perfectly at room temperature to optimize its soothing profile.
