No inactive time; partially freezing the beef is optional but makes thin slicing easier.

Method

  1. Heat a wide pan over medium-high heat. Add part of the oil and cook the onions and green bell pepper until softened and lightly browned.

  2. Push the vegetables to one side. Add the remaining oil and the thinly sliced beef sirloin in a loose layer.

  3. Season with salt and black pepper, then cook quickly while chopping and turning the beef with a spatula.

  4. Mix the beef with the vegetables, divide into two piles, and lay provolone cheese over each pile until melted.

  5. Scoop each cheesy beef pile into a warm hoagie roll and serve immediately.

How to tell it's done

The beef should be juicy and thin, the cheese melted, and the roll soft but sturdy enough to hold the filling.

Tip

Partially freezing the beef for 20–30 minutes makes it easier to slice very thinly.

Serve hot with pickles, potato wedges, or a simple salad.

Common mistakes

The beef is grey and steams in its own liquid.
High heat, a loose single layer, and a wide pan. Sirloin sliced thin releases water fast; crowded, it boils, and a cheesesteak needs the browning.
The cheese does not melt properly.
Lay it over the hot beef in the pan and give it a moment, rather than putting it into the roll cold. Provolone needs the meat's heat under it and the pan's heat below.

Substitutions

  • Thin slicing is important; thicker beef will not cook like a classic cheesesteak.
  • Provolone gives a recognizable deli-style flavor, but another mild melting cheese can work in a practical version.
  • Green bell pepper is optional in some Philadelphia versions, but it adds home-cooking balance.
  • Toast the roll lightly if it is very soft so it can hold the filling.

Storing and reheating

Eat immediately. The cooked beef and onion mixture keeps two days in the fridge and reheats acceptably in a pan, but a built cheesesteak goes soft within minutes and does not survive being kept.
