Includes a short seasoning rest before grilling and a covered rest after grilling so the goat meat slices without losing its juices.
Method
Pat the goat meat dry and make a few shallow cuts on thicker pieces so the seasoning reaches inside.
Mix lemon juice, garlic, ginger, oil, salt, and black pepper. Rub this mixture evenly over the goat meat.
Rest the seasoned meat while the grill or grill pan heats to medium-high heat.
Place the goat pieces on the hot grill and cook, turning occasionally, until browned on all sides.
Move thicker pieces to a cooler part of the grill and continue cooking until the meat is cooked through and tender enough to chew easily.
Rest the grilled meat for a few minutes before slicing or serving. Finish with chopped coriander leaves if using.

The outside should be browned and lightly smoky, while the inside should be fully cooked, juicy, and easy to chew.
