Ingredients

You'll need: Stovetop.

About an hour. The rice and the jewelled garnish are made separately and only meet on the plate, which is what keeps the colours distinct.

Method

  1. Boil the rinsed rice in salted water until the grains are just firm in the center, then drain well.

  2. Return the rice to a clean pot with olive oil. Drizzle saffron water over part of the rice, cover tightly, and steam on low heat until fluffy.

  3. Warm butter in a small pan. Add carrot and cook briefly until just softened.

  4. Add barberries, raisins, candied orange peel, sugar, and cardamom. Toss briefly until glossy.

  5. Add almonds and pistachios at the end so they stay crisp and colorful.

  6. Spoon the jeweled garnish over the saffron rice just before serving.

  7. Fluff gently at the table or serve with the garnish arranged on top.

How to tell it's done

The rice should be fluffy and separate, with glossy jewel-like garnish scattered across the top.

Getting it right

Tip

Add nuts at the very end so they remain bright and do not soften in the hot garnish.

Serve as a festive main rice with yogurt, salad, or a simple grilled protein on the side.

Common mistakes

The barberries turn black and bitter.
They need seconds in the butter, not minutes, and they burn faster than any other fruit here. Add them last, toss once, and take the pan off the heat.
The garnish bleeds and the rice turns muddy.
Spoon it over at the last moment rather than folding it through. Morassa polo is meant to look like jewels on saffron rice; mixed in early, the colours run together.

Substitutions

  • Skip almonds and pistachios for a nut-free local variant only if you are fine leaving both garnishes out.
  • Dried Barberries give the classic tart contrast; dried cranberries can work as a fallback but are less authentic.
  • Use a small amount of Candied Orange Peel because too much can overpower the rice.

Storing and reheating

Rice and garnish keep three days in the fridge stored separately, which is also how to reheat them. Freezing the rice works for two months; the garnish is better made fresh.
