You'll need: Stovetop.

Method

  1. Heat a portion of the oil in a pan. Add the mushrooms and sauté on high heat for 4-5 minutes until they release water, shrink, and get lightly browned. Remove and set aside.

  2. In the same pan, heat the remaining oil. Add cumin seeds and let them crackle.

  3. Incorporate the chopped onions. Sauté on medium heat for 7-8 minutes until they achieve a deep golden brown.

  4. Add ginger-garlic paste and slit green chillies. Cook for 1 minute until the raw aroma dissipates.

  5. Introduce the tomato puree along with turmeric, Kashmiri red chilli powder, coriander powder, and salt.

  6. Cook the masala thoroughly for 8-10 minutes until it becomes thick, dark, and the oil separates from the edges.

  7. Add the green peas and sauté for 2 minutes alongside the masala base.

  8. Fold in the sautéed mushrooms and pour in hot water. Mix harmoniously.

  9. Cover and simmer on low heat for 8-10 minutes until the peas are tender and the gravy reaches your desired consistency.

  10. Crush kasuri methi between your palms and add it to the gravy with the garam masala. Stir well.

  11. Garnish with fresh coriander and serve immediately.
