Kaju Katli (Cashew Fudge)

Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

No inactive time is built into the recipe, but the katli needs about 1 hour at room temperature to cool and firm before cutting cleanly.

Method

  1. Grind the cashews in a dry mixer jar in short pulses (2-3 seconds each). Do not run the mixer continuously, or the cashews will release oil and turn into a sticky paste. Sieve the powder to ensure it is fine.

  2. In a heavy-bottomed non-stick pan, add the sugar and water. Heat on a medium flame until the sugar dissolves completely and the syrup starts boiling.

  3. Once the syrup is bubbling, lower the flame and add the cashew powder. Stir continuously to prevent lumps.

  4. Add the cardamom powder and rose water. Keep cooking and stirring the mixture on low heat for 8-10 minutes.

  5. The mixture will start thickening and leaving the sides of the pan. To test, take a tiny portion, let it cool for a few seconds, and roll it between your fingers. If it forms a non-sticky ball, the mixture is ready.

  6. Turn off the heat. Transfer the mixture to a large piece of greased butter paper or a greased plate. Let it cool slightly for 3-4 minutes until tolerable to touch.

  7. Brush a little ghee to your palms and knead the warm cashew mixture like dough until it becomes incredibly smooth and glossy.

  8. Place another butter paper on top and use a rolling pin to roll the dough evenly to your desired thickness (usually 3-4 mm).

  9. Carefully lay the silver vark on top. Let the Kaju Katli cool and set completely for 1 hour at room temperature.

  10. Using a sharp chef's knife, cut into classic diamond shapes. Gently separate the pieces and serve.

How to tell it's done

The katli should look smooth and satin-like, bend slightly before breaking, and taste rich without oily patches or grainy sugar.

Getting it right

Tip

Pulse the cashews briefly and stop before they turn oily. Knead the cooked mixture while warm so it rolls smooth instead of cracking.

What to serve it with

Cut into diamonds for Diwali, Raksha Bandhan or wedding sweet boxes, with edible vark only if it is food-grade.

Common mistakes

The kaju katli turns dry or crumbly.
Do not overcook the cashew mixture; stop when a cooled pinch rolls into a soft, non-sticky ball.

Storing and reheating

Store kaju katli in an airtight container at cool room temperature for 3 days, or refrigerate for up to 1 week. Separate layers with parchment.
