Ingredients
Quantities are for 2 servings.
You'll need: Stovetop.
No inactive time is needed; keep the tray ready because the kopra pak firms quickly once the coconut mixture leaves the pan.
Method
Warm a small portion of the milk, add the saffron threads, and let them steep so the color and aroma bloom. Set aside.
In a heavy-bottomed wide pan, warm the ghee on low-medium heat. Add the freshly grated coconut and roast gently for 2-3 minutes, keeping it pale.
2–3 min
Decant the bulk volume of the full-fat milk directly over the lightly toasted coconut base. Maintain the medium heat setting, engaging in frequent, sweeping agitation. The objective is a relentless reduction until the porous coconut structure almost entirely exhausts and absorbs the surrounding dairy volume.
Add the sugar and the deeply coloured saffron milk to the pan. Stir it in thoroughly. Expect the mixture, which was tight, to loosen right back into a very fluid state as the sugar dissolves.
Re-commit to a grueling phase of continuous thermal reduction and strong manual stirring. Pursue this action relentlessly until all free-floating aqueous elements vaporize entirely. The target texture is reached when the mixture forcibly binds into a singular, very cohesive, dense lump that cleanly and stubbornly detaches itself from the sides of the pan.
Sprinkle in the cardamom powder, fold once more to mix it evenly, and turn off the heat.
Quickly move the hot mixture to a greased tray or thali. Use the back of a sturdy spoon to press and level it into an even slab.
Let the mixture cool and set. While it is still faintly warm, score it into squares or diamonds, then separate the pieces only after it cools completely.
How to tell it's done
The fudge should hold a clean square, feel moist but not sticky, and show fine coconut texture with a saffron aroma.
Getting it right
Tip
Stop cooking when the coconut mixture holds together and leaves the pan. Overcooking after sugar is added makes the fudge rubbery.
What to serve it with
Cut kopra pak into small squares for Diwali gifting, puja thalis or a saffron-scented after-meal sweet.
Common mistakes
- The kopra pak becomes chewy.
- Cook on moderate heat and remove it as soon as it gathers into a moist mass that leaves the pan.
Storing and reheating
Refrigerate kopra pak in an airtight container for up to 5 days. Bring to room temperature before serving.
