Ingredients

Quantities are for 2 servings.

You'll need: Stovetop, Pressure Cooker.

Allow 2 hours of inactive soaking for the Bengal gram so the chana dal cooks tender without losing its shape.

Method

  1. In a pressure cooker, cook the soaked lentils with the measured water, turmeric and salt for about 5 whistles, until tender but still holding their shape.

  2. In a heavy-bottomed pan, bring the ghee to temperature. Introduce the cumin seeds; upon crackling, immediately follow with the asafoetida.

  3. Add the grated ginger and chopped green chillies, then sauté for 30 seconds until aromatic.

  4. Add the chopped tomatoes, remaining turmeric powder, and coriander powder. Cook this foundation thoroughly until the tomatoes disintegrate and the ghee visibly separates from the masala edges.

  5. Transfer the boiled lentils into the tomato base. Simmer gently for 5-8 minutes so the grains take on the tangy masala.

  6. Finish with a generous garnish of freshly chopped coriander leaves prior to service.

How to tell it's done

The dal should be chunky, with distinct tender lentils in a glossy tomato-ghee base.
