Method

  1. Boil the raw jackfruit in water for 10 minutes, then drain to reduce its raw aroma.

  3. Heat the measured coconut oil in a heavy pot. Fry the spice paste with galangal and Indonesian bay leaves until fragrant.

  4. Add the drained jackfruit and tofu, then stir gently so the pieces are coated with the aromatics.

  5. Add coconut milk, water, palm sugar, and salt. Bring to a gentle simmer.

  6. Add the boiled eggs and cook on low heat until the jackfruit is very tender and the sauce turns lightly brown and sweet-savory.

  7. Simmer until the sauce thickens and clings to the jackfruit. Remove tough aromatics if preferred before serving.
