Quantities are for 2 servings.

You'll need: Stovetop.

No soaking is needed, but the mixture needs long active stirring and then cooling before it can be sliced cleanly.

Method

  1. Before heating, place a heavy-bottomed deep pan or copper pan on the stove. Whisk the thick coconut milk with the rice flour until smooth and lump-free.

  2. Add the broken-up date palm jaggery, which stands in well for the Goan black palm jaggery that is hard to find, straight into the cold coconut mixture. Stir until it looks completely even.

  3. Set the pan over a steady medium flame and start stirring without stopping. The starches react quickly, and the mixture soon begins to thicken.

  4. Lower the heat immediately. Stir the dodol continuously for 30-40 minutes once it thickens; stopping can scorch the bottom.

  5. Observe the deep chemical transformation: the paste will firmly darken to a mirror-like, obsidian brown hue, actively repelling from the metallic sidewalls of the pan to coalesce into an intensely gelatinous, very kinetic, wobbly structure.

  6. Embed the chopped cashews directly into the volatile core. Persist in the cooking phase strictly until the architecture organically expels its trapped lipid content (oil), generating a dramatic, varnished shine.

  7. Working quickly, pour the very thick hot dodol into a greased shallow tray and level the top with a flat spatula.

  8. Leave the tray at room temperature until the dodol sets firmly. Once set, cut the slab into diamonds or squares.

How to tell it's done

The dodol should be dark, glossy, bouncy and sliceable, with no raw rice-flour taste and a deep coconut-jaggery aroma.

Getting it right

Tip

Cook dodol low and slow, stirring constantly once it thickens. High heat scorches the coconut milk and leaves a bitter bottom layer.

What to serve it with

Serve dodol in small slices on a Goan Christmas kuswar platter with bebinca, neurios and rose cookies.

Common mistakes

The dodol sticks and burns.
Use a heavy pan, keep the heat low, and stir continuously once the mixture starts pulling from the sides.

Storing and reheating

Store dodol wrapped or airtight in the refrigerator for up to 2 weeks. Bring slices to room temperature before serving.
