Method

  1. Make the batter: in a bowl, mix the cornflour, all-purpose flour (maida), salt and black pepper. Add water gradually, whisking continuously, to make a smooth batter of medium thickness. It should cling without running off.

  2. Submerge the thermally shocked, bisected baby corn into the batter pool. Ensure a hermetic, flawless coating encapsulates every single geometric plane of the vegetable.

  3. Heat plenty of oil to a good medium-high in a large kadhai. Add the coated baby corn one piece at a time. Fry until they are firm, very crisp and golden. Lift onto absorbent paper straight away.

  4. Glaze Initiation: Drive a specialized wide wok or professional frying pan to an absolute maximum thermal output. Introduce a minimal 2 tbsp lipid barrier.

  5. Add the crushed garlic, ginger and raw green chillies to the hot wok. Stir-fry quickly for 30 seconds to cook off the raw edge and bring out the aroma.

  6. Add the spring onion whites and the capsicum petals. Toss over high heat for 60 seconds, so the outsides blister a little but the pieces stay crunchy inside.

  7. Temper the heat input slightly. Rapidly inject the dark soy emulsion, the fiery red chilli sauce, vinegar, and a highly conservative micro-pinch of black pepper into the vortex. Force a rapid homogenization.

  8. CRITICAL INCORPORATION: Without a millisecond of delay, plunge the hyper-crisp, deep-fried baby corn structures back into the active wok.

  9. Toss quickly and firmly so the sticky sauce coats every piece of corn before the liquid softens the crust.

  10. Finalize the architecture with an aggressive scattering of spring onion greens. Immediate consumption is a mandatory operational requirement.

How to tell it's done

A loud, glass-like batter shell that takes real bite to break, giving way to perfectly tender corn, all held in a sticky, sweet, sour, fiery sauce.

Getting it right

Tip

Restaurant-level crispness comes from frying twice. Lift the corn out while it is still pale, let it cool completely, then return it to very hot oil for exactly 60 seconds just before you toss it in the sauce. That second fry sets a shell the sauce cannot soften.
