Method

  1. Boil the raw jackfruit cubes in water with a pinch of turmeric and salt until 70% cooked. Drain and set aside.

  2. Heat a portion of mustard oil in a heavy pan until it smokes, then lower the heat. Fry the boiled jackfruit pieces until golden. Remove and set aside. In the same oil, fry the potato cubes until golden and set aside.

  3. Add a little more mustard oil if needed. Add bay leaves and cumin seeds to the hot oil.

  4. Add the ginger paste and sauté for a few seconds until fragrant. (This is a traditional Niramish recipe, so no onions/garlic are used).

  5. Add the tomato puree, remaining turmeric, and cumin powder. Cook on medium heat until the raw smell vanishes and the masala releases oil.

  6. Return the fried jackfruit and potatoes to the pan. Toss them well with the masala for 2-3 minutes.

  7. Pour in the warm water and salt to taste. Cover and simmer on medium-low heat for 15 minutes, allowing the vegetables to absorb the rich gravy completely.

  8. Once the vegetables are completely tender and the gravy is thick, turn off the heat. Stir in ghee and garam masala. Let it rest for 5 minutes before serving.

Meaty, fibrous chunks of jackfruit and buttery soft potatoes cloaked in a deeply aromatic, thick, ghee-scented red gravy.

Getting it right

Tip

Raw jackfruit is often called 'Gachh Patha' (tree mutton) in Bengal because of its meaty texture. Frying the boiled pieces seals the outside, allowing them to soak up the gravy without turning to mush.

A festive favorite served piping hot with Steamed Rice or Luchi (fried flatbread).
