Method

  1. Heat mustard oil in a kadhai until it begins to smoke slightly, then reduce the heat. Lightly fry the marinated prawns for just 1-2 minutes until they turn orange and curl up. Remove and keep aside.

  2. In the same oil, fry the potato cubes until they get a light golden crust. Remove and keep aside.

  3. To the remaining oil, add bay leaf and cumin seeds. Once they splutter, add the onion paste and fry well until it turns golden brown.

  4. Add ginger-garlic paste and sauté for another 2 minutes to eliminate the raw smell.

  5. Lower the flame and add tomato puree, turmeric, cumin powder, and Kashmiri red chilli powder. Cook until the masala releases oil from the sides.

  6. Add the fried potatoes along with warm water and salt. Cover and simmer on low heat for 10-12 minutes until the potatoes are cooked and soft.

  7. Once potatoes are done, slide the fried prawns into the bubbling gravy. Cook for barely 3 minutes (do not overcook prawns or they become rubbery).

  8. Turn off the heat. Stir in the garam masala powder and let it rest covered for 5 minutes before serving.

Getting it right

Tip

Prawns take very little time to cook. Frying them briefly at the start and adding them right at the end ensures they remain incredibly juicy and tender.
