Method

  1. Heat the cooking oil in a pan over medium heat. Add the mustard seeds and let them pop.

  2. Add the minced garlic and chopped green chillies. Sauté for 30 seconds until the garlic is fragrant but not browned.

  3. Add the chopped onions. Fry on medium heat until they soften and turn translucent. We want to retain a slight sweetness from the onions.

  4. Add the chopped french beans. Stir well to mix them with the aromatics.

  5. Sprinkle turmeric powder, red chilli powder, coriander powder, and salt. Mix thoroughly.

  6. Cover the pan with a lid and cook on low heat for 8-10 minutes. Stir halfway through. The moisture released from the beans and onions is sufficient to cook them.

  7. Remove the lid and check if the beans are tender. Stir-fry for 1 more minute on medium heat to evaporate any remaining moisture.

  8. Turn off the heat and serve.
