Ingredients

Quantities are for 2 servings.

You'll need: Stovetop, Pressure Cooker.

Allow 15 minutes for the prawns to marinate with turmeric and salt before they simmer briefly in the dal.

Method

  1. In a pressure cooker, boil the split pigeon peas with half of the turmeric powder and a drop of oil until completely soft and mushy (about 4 whistles). Whisk well and set aside.

  2. In a wide pan or kadai, heat the cooking oil over medium heat.

  3. Add the mustard seeds and cumin seeds. Allow them to splutter. Toss in the fresh curry leaves and slit green chillies.

  4. Add the finely chopped onions. Sauté until the onions turn a deep golden brown.

  5. Stir in the ginger garlic paste and cook for an additional minute until the raw garlic aroma dissipates.

  6. Add the marinated prawns to the pan. Roast them on medium-high heat for 2-3 minutes until they curl slightly and turn pink.

  7. Lower the heat. Add the chopped tomatoes, red chilli powder, remaining turmeric powder, and salt. Cook until the tomatoes are mushy and oil begins to separate from the masala.

  8. Pour the tamarind extract into the prawn masala. Let it simmer for 2 minutes to cook out the raw tamarind flavor.

  9. Pour the pre-cooked, whisked dal into the pan. Stir thoroughly to combine the spicy prawn gravy with the lentils.

  10. Add a splash of water if the consistency is too thick. Bring the entire mixture to a rolling boil, then simmer on low heat for 5 minutes.

  11. Turn off the heat. Let the dal rest for a few minutes before serving to let the flavors infuse.

How to tell it's done

The dal should be deeply coloured and glossy, with tender curled prawns and a hot tempering oil layer on top.

Getting it right

Tip

Avoid overcooking the prawns early. They need only a short simmer with the cooked lentils and tamarind to stay tender.

What to serve it with

Serve royyala pappu with hot rice and Andhra mango pickle, or avakaya, on the side.

Common mistakes

The prawns turn rubbery.
Marinate them briefly, sear or simmer only until just cooked, and avoid long boiling after they go into the dal.

Storing and reheating

Refrigerate royyala pappu in a shallow covered container for up to 2 days. Reheat gently until hot throughout; freezing is not recommended because prawns can turn rubbery.
