Method
Place the thickened flattened rice (poha) into a fine-mesh sieve. Subject it to a brief, gentle wash under flowing water. Employ your fingertips to lightly toss the flakes, guaranteeing uniform hydration without structural collapse. Allow an absolute drainage phase.
Season the drained, rested poha directly with the salt, sugar and turmeric powder. Toss it very carefully to coat the flakes; seasoning them now keeps them from breaking up when you mix them into the pan later.
Heat the cooking oil in a wide skillet. Add the raw groundnuts and pan-fry them, stirring, until they are golden and crunchy. Lift them out and set aside.
Drop the mustard seeds into the remaining hot oil. When they pop, fold in the fresh curry leaves and slit green chillies to release their aroma.
Add the finely diced raw potatoes. Sauté over high heat for 60 seconds, then cover the pan. Turn the heat right down and let them steam for 4-5 minutes, until they are tender all the way through.

Add the finely chopped onions to the pan. Stir over medium heat until they turn soft, pink and translucent. Adding them after the potatoes keeps them from burning.
Add the seasoned, rested poha to the pan. Using a wide, flat spatula, fold it gently from the bottom up so the flakes take up the spiced potato and onion base.
Seal the pan with the lid once more. Mandate a 3-minute, ultra-low heat steam bath, forcing the flavors to unify and deeply penetrate the starches.
Turn off the heat. Fold in the freshly squeezed lemon juice, the reserved crunchy groundnuts and the chopped fresh coriander. Give it one last toss and serve immediately.
How to tell it's done
The poha should be brilliantly yellow, fluffy, and separate, with soft bites of potato and crunchy peanuts.

Tip
Always cut the potatoes into very small, uniform cubes so they cook quickly and evenly without needing extra water.
What to serve it with
Top with crunchy Ratlami sev or bhujia, and serve with hot Adrak Wali Chai (Ginger Tea).
