Method
Heat the oil in a wide kadai or pan over medium heat. Add the cumin seeds and let them splutter.
Add the diced potatoes and sauté for 3-4 minutes until they develop a slight golden crust.

Add the shredded cabbage, green peas, and slit green chillies. Mix well to combine with the potatoes.
Sprinkle turmeric powder, red chilli powder, coriander powder, and salt evenly over the vegetables. Toss thoroughly so the spices coat everything.
Cover the pan with a lid and cook on low heat for 8-10 minutes, stirring occasionally, until the potatoes are tender and the cabbage is cooked but still has a slight bite.

Make a small well in the center of the vegetables and add the chopped tomatoes. Cover them with the hot cabbage and cook for another 2-3 minutes until the tomatoes soften.

Remove the lid, increase the heat slightly, and stir-fry for a minute to evaporate any excess moisture.
Turn off the heat, sprinkle garam masala, and garnish with fresh coriander. Serve hot.
