Method

  1. In a broad mixing bowl, assemble the rice flour, chopped onions, grated carrots, fresh coconut, green chillies, ginger, cumin seeds, curry leaves, coriander, and salt.

  2. Mix the dry ingredients by hand. Rub the onions into the flour so they release some moisture.

  3. Progressively add the warm water, kneading to construct a soft, highly pliable dough. Given the absence of gluten in rice flour, it lacks elasticity but must cohere firmly.

  4. Prepare a cold, heavy iron tawa, banana leaf, or parchment sheet. Grease the surface well with oil.

  5. Extract a substantial dough portion. Position it squarely on the greased, cold tawa.

  6. Hydrate your fingertips. Employing a gentle, outward circular motion, pat the dough directly onto the tawa, transforming it into a remarkably thin, flat disc.

  7. Poke a few holes near the centre of the rotti with your index finger. This lets the oil reach the middle so it cooks through evenly.

  8. Transfer the tawa to the stove over medium-high heat. Drizzle oil into the center hole and around the outer edge.

  9. Cover with a lid to trap steam, cooking until the base develops a deep, crispy brown finish.

  10. Remove the lid, flip carefully with a spatula, and cook the other side uncovered until golden spots appear.

  11. Retrieve and serve immediately. (Crucial: The tawa must be washed and cooled completely under running water before formatting the subsequent rotti).
