No inactive time beyond the few minutes the curry rests off the heat, which lets the sauce settle around the chicken instead of sliding off it.
Method
Blend shallots, garlic, ginger, galangal, lemongrass, candlenuts, soaked chilies, turmeric, and coriander into a thick spice paste.
Heat the measured oil in a heavy pan. Cook the spice paste slowly until it darkens slightly, smells aromatic, and the oil begins to separate.
Add chicken pieces and turn them in the paste until coated and lightly sealed.
Add coconut milk, makrut lime leaves, tamarind paste, palm sugar, and salt. Simmer gently until the chicken is cooked through.
Continue simmering until the curry thickens and the oil lightly rims the surface.
Rest the curry off the heat for a few minutes before serving so the sauce settles around the chicken.

The sauce should be thick, creamy, and cling to the chicken; the chicken should be tender and fully cooked.

Do not rush the spice paste stage; undercooked paste leaves the curry sharp instead of rounded and aromatic.

Serve with plain rice, cucumber slices, or roti canai for a fuller Malaysian meal.
Common mistakes
- The curry tastes raw and thin.
- Fry the rempah slowly until the oil separates out of it — ten minutes or more. This is the step Nyonya cooking turns on, and a paste hurried into the coconut milk leaves a harsh, uncooked edge nothing later fixes.
- The sauce splits.
- Keep it at a gentle simmer once the coconut milk is in. A rim of oil at the surface is wanted; a hard boil takes it past that into curdled sauce.
Substitutions
- If candlenuts are unavailable, use a small amount of cashew only after reviewing tree-nut labeling for your app build.
Storing and reheating
Keeps four days in the fridge and is better the next day. It freezes for three months. The rempah alone keeps a week refrigerated under oil and freezes in portions, which is what makes this a weeknight curry.
