You'll need: Stovetop.
Allow 10 minutes of inactive resting after poaching; the chicken firms slightly, making it easier to slice before the vinegar stir-fry.
Method
Place the chicken in a saucepan with the portion of water reserved for poaching, the thick ginger slices, spring onion whites and the portion of salt reserved for poaching. Bring just to a boil, then reduce the heat to a gentle simmer.
Poach the chicken for 10 to 12 minutes, turning once, until the thickest part reaches 74°C and no pink flesh remains. Transfer it to a clean plate, cover loosely and let it rest for 10 minutes. Reserve a small portion of the poaching liquid for the sauce.

Slice the rested chicken across the grain into strips about 1 cm thick. Mix the portion of rice vinegar reserved for cooking with the Shaoxing wine, soy sauce, sesame oil, sugar, the remaining salt and the reserved poaching liquid.
Heat the neutral oil in a wok or frying pan over medium heat. Add the dried red chilli peppers, Sichuan peppercorns, shredded ginger and garlic. Stir-fry for about 30 seconds, until fragrant without letting the aromatics burn.

Increase the heat to medium-high, add the sliced chicken and toss for 1 to 2 minutes, until the edges are lightly coloured and the chicken is hot throughout.

Pour in the prepared sauce and add the spring onion greens. Toss for 2 to 3 minutes, until the liquid becomes lightly glossy and coats the chicken without forming a heavy glaze.
2–3 min
Remove the pan from the heat and stir in the rice vinegar reserved for finishing. Serve immediately so the vinegar aroma remains fresh and the chicken stays tender.
How to tell it's done
The chicken should be tender and moist, with lightly coloured edges and a thin glossy coating. The ginger should retain a slight bite, and the sauce should taste bright and tangy rather than thick or sweet.
Getting it right
Tip
Add the final portion of rice vinegar only after removing the pan from the heat. Prolonged boiling softens its clean aroma and makes the dish taste flatter.
What to serve it with
Serve immediately while the chicken is hot, spooning the light vinegar sauce over each portion without allowing it to sit and reduce further.
Common mistakes
- The chicken shreds unevenly or the vinegar sauce tastes flat.
- Rest the poached chicken before slicing and add the final vinegar off the heat. Long boiling dulls the clean tang that defines the dish.
Substitutions
- Chicken Thigh — Chicken Breast may replace the thigh meat. Poach it only until the centre reaches 74°C and slice it after resting; it will be leaner and less forgiving during the final stir-fry.
- Rice Vinegar — Vinegar may replace rice vinegar in a smaller amount. Its acidity is sharper and less rounded, so add it gradually and expect a less characteristic flavour.
- Shaoxing Wine — Water may replace Shaoxing wine for an alcohol-free variation. The sauce will have less fermented depth; packaged Shaoxing wine may contain wheat and should be checked when gluten exposure matters.
- Dried Red Chili Peppers — Use fewer dried red chilli peppers for a milder dish. This lowers the heat but preserves the vinegar, ginger and Sichuan-pepper character.
Storing and reheating
Refrigerate Dong'an chicken in a shallow covered container for up to 3 days. Reheat gently until hot; freezing is possible for up to 2 months, though the vinegar aroma becomes less bright.
