Method
In a mixing bowl, combine the thinly sliced onions, salt, red chilli powder, turmeric, and carom seeds. Massage the mixture with your hands, gently squeezing the onions to encourage them to release their natural moisture.
Allow the seasoned onions to rest undisturbed for 10 minutes. This process softens them and creates the liquid base for our batter.

Fold in the finely chopped green chillies and fresh coriander.
Gradually incorporate the gram flour and rice flour. Do not add any external water. Use a binding technique, mixing solely with the moisture released by the onions until a tight, sticky, clumped mass forms.
Bring a generous amount of oil to deep-frying temperature in a heavy kadhai over medium-high heat.
Extract a small ladle of this extremely hot oil and carefully pour it over your onion mixture. Mix it in briskly. This crucial chef's step instantly aerates the batter for an ultra-crispy final texture.
Take small, loose, uneven clusters of the mixture—avoid rolling them into tight geometric spheres—and gently ease them into the hot oil.
Fry over a steady medium heat, turning now and then with a slotted spoon, until the clusters are deep golden brown with crisp, ragged edges.
Remove with a spider skimmer, allow excess oil to drain on absorbent paper towels, and serve immediately.
How to tell it's done
Expect an intensely crunchy, shattered, almost jagged exterior that yields to warm, soft, and sweet caramelized onion strands inside.
