Method

  1. Heat the cooking oil in a wide, heavy-bottomed pan. Add the cumin seeds and let them crackle.

  2. Add the sliced potatoes. Fry them on medium heat for 4-5 minutes until they are halfway cooked and slightly crispy on the edges.

  3. Add the sliced onions and sauté for 2 minutes until they just begin to soften.

  4. Add the chopped bhindi (okra) to the pan. Sprinkle turmeric powder and gently mix. Cook uncovered on medium heat for 5-6 minutes, tossing occasionally.

  5. Once the bhindi is tender and any sliminess has disappeared, add the red chilli powder and coriander powder. Mix well and roast for 2 more minutes.

  6. Turn off the heat. Finally, sprinkle the salt and dry mango powder (amchur). Give it a final gentle toss.
